Winemaking – Syrah sourced from Willunga dark soils and Blewitt Springs deep sand were picked separately fermented on skins for four weeks in open fermenters with the use of natural yeasts to enhance flavour complexity. Malolactic fermentation and maturation in a combination of new and one year old French oak allows the wine to develop roundness and soften over 24 months. New French oak from Dargaud & Jaegle and the Nadalie Marsannay cooperages are employed. Two oak selection passes were performed to leave the final handful of barrels destined for The Reserve Syrah. Bottled unfined and unfiltered in December 2017.
